The ingredients needed to make Hot Brown:
- Get 1/4 c butter
- Take 1/4 c flour
- Get 1 quart heavy cream(or 8 oz h.c. and 8 oz whole milk)
- Take 1/2 cup pecorino romano cheese (+ some for topping)
- Take 14 oz roasted turkey breast
- Take 4 slice Texas toast, crusts trimmed*
- Get 4 slice crispy bacon
- Get 2 roma tomatoes, sliced
- Get 1 salt, pepper, & nutmeg to taste
- Make ready 1 paprika & parsley to taste
Instructions to make Hot Brown:
- In a 2 Qt. saucepan, melt butter and slowly whisk in flour until it forms a thick paste. Continue to cook on med heat for 2 minutes, stirring frequently.
- Whisk heavy cream into mixture, bring to simmer for around 2min.
- Remove sauce from heat and slowly whisk in pecorino romano cheese until the Mornay sauce is smooth.
- Add salt, pepper & nutmeg.
- Assemble Brown using bread, turkey, tomatoes. Pour sauce over all. Sprinkle with additional cheese.
- Place in oven at 350°for about 20min or until cheese is brown and melted.
- Top with bacon. Sprinkle with parsley and paprika and serve.
- I have used artisan rosemary bread as well for an added pop of flavor.
