- Prepare 200 gr feta cheese
- Make ready 100 gr high fiber flour
- Prepare 3 large courgettes

- Grate the courgettes and season with salt. Leave on side to allow water to drain.

- Heat a medium pan with 3 tablespoons of olive oil. Using wet hands form small patties and add them into the oil.
- Cook them until they are nice and brown, using a spatula turn them and cook on the other side for another 5 min.
- Remove from pan into a plate covered with paper towels to remove any extra fat.
- Best served cooled with some greek yogurt and fresh herbs. Enjoy!
