  12. Make ready 1 Salt and pepper to taste
  13. Take 1 I didn't use sugar nor the cornstarch to thicken

  15. Take 1 I used potatoes instead, same grams
  16. Take 1 Fresh tomatoes chopped same grams
  17. Make ready 2 cubes
  18. Make ready 400 grams raw chickpeas, rinsed well and cooked for 4 hours or used the directory on the pack. Drained once cooked
  19. Prepare 1 Canole oil, a bit more than the requirement
  20. Get 1 Seasoned the chicken with salt, pepper and nutmeg
Instructions to make Autumn Chicken Stew:
  1. Heat the oil in a skillet and fry the onions for 2-3 minutes
  2. stir in the cinnamon and ground ginger if using
  3. Add in the chicken and fry until both sides are lightly brown
  4. Add tomatoes and sugar if using
  5. Season to taste with salt, pepper and cubes
  6. Add chickpeas and either pumpkins, squash or potatoes
  7. Add a bit of water if you are using potatoes
  8. Mix very well, cover and let it cook for 30 minutes
  9. Add fresh ginger if you are using half way through this process
  10. Once either pumpkins, squash or potatoes is cooked, you can thicken your stew with the cornstarch and water depending on your preferences
  11. Stir in chopped coriander just before serving
