Wash the sweet potatoes and beetroot thoroughly and dry. Halve the beetroots and sweet potatoes, then cut into large chunks. Season to taste with salt and pepper. If the dressing is too viscous, add some water.
Steps to make Quinoa and Beetroot Salad:
- Whisk all the dressing ingredients in a small bowl and keep aside.
- Wash the beetroot and cut the ends of the beet and place in a pan of boiling water and boil for 5-7 minutes and set aside.
- Bring quinoa and 2 cups water in a sauce pan over high heat.
- Reduce the heat to medium low, cover and simmer until quinoa is tender and liquid has been absorbed, about 15 minutes.
- Fluff the quinoa with the help of fork.
- In a salad bowl, add quinoa, beetroot, cucumber, onion and cilantro and mix well.
- Pour the dressing over the tossed salad and serve chilled!!.
Season to taste with salt and pepper. If the dressing is too viscous, add some water. Transfer the quinoa to a plate and drizzle with dressing. Once the quinoa and beetroot are cooked, allow them to cool. Then make up the rest of your salad, I used a combination of beetroot leaves, rocket and micro greens.
