This quiche definitely tastes as good cold as warm from the oven, and makes a nice appetizer when cut in small portions, as well.

- Make the pie crust in a bowl combine the flour,salt and margarine and rub it in
- Add the water and knead it together do not over knead.fold into a ball and wrap in cling film and refrigerate for atleast 30 minutes
- Pre heat your oven to 180 degrees.Fry the onion with butter and oil till translucent then add the mushrooms and fry them till brown
- Put the mushrooms aside
- Let's go back to the crust roll it out to a circle and line your pie tin I used a casserole dish.poke holes at the bottom with your fork
- Put parchment paper on your pie crust and put pie weights on top or any dry cereal you have.blind bake for 15 minutes then remove the weights and parchment and bake for 25 minutes or until golden brown
- Combine your eggs,milk and spices and whisk lightly
- To your crust layer the mushrooms on top,then the cheese,then pour the milk mixture
- Dice the cherry tomatoes in half and place them on top
- Bake for 30 minutes allow it to cool before you remove from the dish
I have used tomatoes and mushroom in my quiche, but you can use other vegetables of your choice, e.g. spinach, peppers or onions. This quiche definitely tastes as good cold as warm from the oven, and makes a nice appetizer when cut in small portions, as well. This is my family's favorite quiche recipe.
