Steps to make Crispy Eggplant / Baingan Fries:
  1. Mix turmeric, salt and garlic powder and apply on the slices. Let it rest for 10-15 minutes. Add water and form a thick batter of the maida mix.
  2. Coat both the sides with it and then coat the slices with breadcrumbs.
  3. In the meantime, heat oil too, I m reusing the oil too. Fry on medium low flame till they become crispy and browns beautifully. Keep it on a kitchen tissue paper to absorb excess oil. Serve hot with tomato sauce!!!
